With the direction of Lilly Morris from Morris's of Usk and Sam Wilkin of Cellarman Sam, this is a blend aimed at exploring the fruitier, drier side of cider, that naturally pairs with traditional farmhouse cheddar cheeses. This iteration centres around three famous cider apples, the Yarlington Mill with its floral spice and bitter fruitiness, Foxwhelp with bright citrus acidic zing and some barrel aged Michelin cider for added structure and depth. This all wraps together wonderfully like a clothbound farmhouse cheddar.
