Sumatra is a wet-hull processed coffee bean, the only that Rivet offers as a single origin.  Processing is the method in which the cherry is removed from the coffee bean post-harvest and has a lot of impact on the final flavor of the bean.  The wet-hull process is particular to Indonesia, where there is more than 200 rainy days a year.

Beans are depulped immediately after harvest, fermented overnight, then cleaned.  The beans are then dried until their moisture content is 11-14%.  Most exporters dry the beans once again.   The wet-hull process, combined with the terroir of the country, create a very flavorful, robust flavor with low acidity.  

We recommend Sumatra for those who are seeking a low acid coffee, but still want a traditional dark roast to enjoy all day.  It suits all brewing methods and our baristas have used it as espresso within our cafe.
